When I decided to create this recipe for Canada Day I had envisioned a peaceful, sunny afternoon with the pork slow cooking on the BBQ, and the aroma of smoky and sweet with a hint of earthiness from the cumin and chili powder drifting over the fence, driving the neighbors crazy all afternoon long... ahhh. I still have hopes for that on the Canada Day weekend; however we have seen a lot of rain lately so I guess I should adapt the recipe to be oven friendly as well, just in case.

All summer long backyards across Canada are filled with friends and family, good music, laughter and great food! Canada Day should be no different, there is guaranteed to be a BBQ somewhere and I’ll be going! Jana always volunteers to bring something, so naturally I am more than happy to oblige. Potluck style BBQ’s are pretty common out east, and a great way to dine with friends. The host will handle the Q, and the guests usually bring sides, salads, desserts, drinks etc. It works great!
