Sometimes even my fridge gets pretty bare, and whipping up dinner for the family can get a little challenging. I thought I had pulled a rabbit out of my hat the other night, creating a delicious dinner from what looked like an empty refrigerator; I was thoroughly pleased with myself. Once the kids had finished their meal, they asked what was for dessert. Dessert, I gasped, I hadn’t thought about dessert. Usually we’ll have some fruit, yogourt or maybe a cookie (if they manage to finish their supper that is!) "Let me have a look," I said. To my horror, there were a few strawberries, no cookies and a couple small pots of yogourt. The kids were not impressed. "Can’t you make something?" the kids asked. "You are a chef!" they added. "Of course I can make something!" I said defending my culinary skills. I grabbed the few strawberries I had along with the small pots of yogourt, and knowing my kids wouldn’t be satisfied with that alone, I rummaged through the cupboards for something to tie it all together. Just as hope was fading, I remembered the devils chocolate cake trimmings I had in the freezer. I whipped out my handy dandy food processor and blitzed up the caked trimmings into a fine chocolate crumb. I started layering the chocolate cake crumbs in small juice glasses alternating with spoonfuls of yogourt. The kids drew closer... I definitely had their attention. I noticed a few fingers reaching into the bowl of cake crumbs on the counter, but I didn’t mind. It bought me enough time to wash, hull and quarter the strawberries, toss them in a bowl with some honey and spoon them gently on top of the final cake crumb layer. It looked OK, but my children were definitely impressed and I had saved my reputation as Chef Dad!
