My mom has many delicious recipes, but this one for her Baked Salmon with a Parmesan Cheese and Herb Crust stands out as one of her favourites. The cheese, herbs and mayonnaise combine in the oven to form this golden brown crisp crust on top, revealing a moist and flavourful fillet of salmon underneath. It was a favourite with my family and I am sure yours will enjoy it, too! Try serving this recipe with some young asparagus and steamed baby potatoes dressed only in butter, sea salt and pepper. Chef Mom’s Baked Salmon with Parmesan Cheese and Herb Crust
Serves 6
Preparation Time: 10 minutes
Cooking Time: 20 minutes
1 Salmon fillet about 1kg
4 tbsp mayonnaise
2 tbsp grated parmesan cheese
2 green onions, thinly sliced
¼ cup chopped parsley
1 tbsp chopped thyme
Sea salt and pepper as needed
- Pre-heat your oven to 350°F and line a baking tray with parchment paper.
- Mix together the mayo, cheese and chopped herbs in a small bowl to form a paste.
- Season the salmon fillet with sea salt and pepper, then spread the cheese and herb mixture evenly over the salmon fillet.
- Bake in the oven until the crust is golden and the salmon cooked, about 20-25 minutes, depending on how thick your salmon fillet is.
- Serve and enjoy!
