
I bought some Popsicle molds from the dollar store a number of weeks back for a school presentation I do every year to promote healthy eating, but had forgotten they were stashed in the cupboard until Ella spotted them the last week. We have been making all different kinds of popsicles together ever since.
They used to request freezes, which I didn’t buy, but now on a hot sunny day they are popsicle crazy! Which I don’t mind at all because instead of coloured sugar water, I fill the popsicles with all different kinds of fruits purees, yoghurt and juices. I think it is a great snack; juts make sure they take them outside! My favourite so far is a hit with everyone young and old, Mango Creamsicle. I love the creamy frozen yoghurt like texture combined with the just sweet enough taste of the mango and honey, delicious!
To make some for yourself simply peel a mango and mix it together in a blender or food processor until really smooth and creamy. Here is what you will need:
- 1 ripe Mango
- 1 ½ cups (375 mL) of Compliments French Vanilla Fat Free Stirred Yoghurt
- 1 ½ cups (375 mL) Compliments Balance Orange Raspberry Mango Juice
- 2 tbsp (30 mL) Compliments Honey
Carefully pour into the Popsicle moulds, set the sticks in place and freeze solid, I was able to make 16 (90 mL) popsicles. To make un-molding them easier, I quickly run the mould under hot tap water; this makes the popsicle release itself from the mould and slide out pretty easy. We have also made popsicles with: orange juice and frozen wild blueberries, lemonade, watermelon and fresh mint, and flavoured yoghurt. I always had a fondness for the red, white and blue “rocket” popsicle the ice cream truck used to bring around at little league games. I made some the other day by freezing Compliments Balance Pomegranate and Blueberry Juice, Compliments Lemonade and Compliments Fruit Fusion Strawberry Passion fruit in layers. It worked, looked and tasted great and took me right back to the ball field.
