When I think of spring, I think of cooking outdoors again. I BBQ year-round but that takes place in the garage, not really outdoors. I also think of fresh Ontario asparagus. I have mentioned in a previous blog that for me, grilling is the best way to cook asparagus. I was looking for a light dinner recipe; my daughter and her friends were making pizza for her 17th birthday party and I just wasn’t in the mood for pizza. So I went to Sobeys and walked the aisles looking for inspiration. They had asparagus on sale and that was that. I grabbed some, along with a pepper, some wraps, turkey and Swiss cheese from the deli and I was done! Below is the simple, fresh recipe that I grilled up for dinner.
Grilled Asparagus Turkey and Swiss Wraps
Makes 4
Prep time: 5 minutes
Total time: 25 minutes
1 red pepper, seeded and cut into strips
16 asparagus spears
1 tbsp (15 mL) Compliments Pure Olive Oil
1 tbsp (15 mL) lime juice (zest it first and reserve)
¼ tsp (1.25 mL) salt
A pinch of black pepper
4 Compliments Whole Wheat Tortilla Wraps
8 slices Compliments Deli Roasted Turkey Breast
4 slices Compliments Sliced Swiss Cheese
4 tbsp (60 mL) Compliments Mayonnaise
2 tbsp (30 mL) Compliments Fresh Pesto
- Preheat the BBQ. Mix the oil, lime juice, salt, and pepper together and pour over the asparagus and the red pepper.
- Grill for 10 minutes or until the asparagus and pepper are lightly charred. Remove from grill.
- Assemble the wraps by mixing the mayo and pesto together and divide between the 4 tortillas. Evenly divide the cheese, turkey, asparagus, red pepper strips and lime zest. Fold the bottom edge up and fold over one end, then roll.
- Place on the grill, seam side down, and cook for two minutes per side or until the wrap gets grill marks.
They were just right - filling but not heavy and made with a few fresh ingredients. It was nice to get outside! In Toronto the past few days there were people in shorts, convertibles and motorcycles on the sidewalks and streets and it was busy! Back home the yard is still snow covered but it is melting.
