Spring is Asparagus season and I love the thin, fresh spears of local asparagus! A few years ago I got turned on to grilling asparagus and I have not boiled or steamed it since!

Asparagus is full of nutrients coupled with the mango, lime and mint and you have a delicious grilled salad that is so good for you and very easy to make.

Grilled Asparagus, Mango, Lime With Mint
Makes 4
Prep time: 5 minutes
Total time: 15 min.

1 bunch Asparagus washed and trimmed
1 mango slice both halves from the seed
1 tbsp. (15ml) lime zest
1 tbsp. (15ml) lime juice
½ lime quartered
1 tbsp.(15ml) Compliments Mint, chopped
1 tbsp. (15ml) Compliments Pure Olive Oil

  1. Pre hear BBQ Grill. Toss all ingredients in a bowl and place asparagus, mango and lime on the grill, turning often to avoid burning. After 5 minutes remove from grill toss back into the bowl and divide onto 4 plates.
