Ever since I created the Beef and Beet Chili for my Super Bowl blog (pretty good game, and the right team won!) people have been coming up to me saying how they love beets, but other than boiling, they don’t know what to do with them. Well here is another great, simple, nutritious roasted vegetable recipe that would fit the bill on any athlete’s plate. All ingredients bring something to the dish, vitamins, minerals, fiber, antioxidants and anti inflammatory properties which benefit an athlete both in training and performance.

I was thinking about what recipe to make for the Olympic-themed blog. I write a lot of entrée blog recipes and I knew I wanted to do some side dishes and took inspiration from the Olympic rings. I wanted to create a vegetable side dish with colours from the rings: white onions, red and yellow peppers, green baby boc Choy, black soya sauce and Compliments Blue Cola.

I’ve been fortunate enough to have seen Canada from coast to coast, with a number of stops in beautiful British Columbia. I’ve water skied Lake Okanogan with no Ogopogo sightings in the fertile Okanogan Valley. Had fun crossing the suspension bridge and searching for banana slugs on Vancouver Island as a boy. Most recently I adventured north to Langara Island on a fishing trip, and hooked a 53.5 lb Chinook salmon (biggest fish of the trip!) I can’t wait to take my family out west!
