I love bread, everything about it. Mixing, kneading, proofing, shaping, the smell of it baking, and eating it freshly baked with a touch of butter. My favourite bread to make is my Mom’s Irish Soda Bread, it reminds me of home... so comforting.

We are still on the Comfort food trail and our new extern student here at The Compliments Culinary Centre at George Brown College, Pia Armogan, contributed her comfort food recipe, Couscous. Pia is a second year Culinary Management student and she chose couscous because it is versatile and quick and easy to make so she can make it when the mood strikes her.
Growing up in my house meant eating well, my Mom was a great cook! After working a full day in the office of my high school she would somehow manage to make a great meal from scratch and have it on the table as my Dad walked in the door. A feat I now realize isn’t always easy!
I had mentioned in my last blog that I poled the Centre on what people's comfort foods were and talked about my daughter’s comfort food of Mac & Cheese. This time around I chose Irene Ngo’s (second year Culinary Management and Nutrition student) "first food you eat after being sick comfort food:" Chicken Noodle Soup.
There is nothing more comforting than good old fashioned home cooking! They are the types of meals you can smell as soon as you walk in the door; they’re warm, hearty and delicious. My list of comfort foods is rather long, in fact I find most foods comforting. If I had to put them in order, meatloaf would be pretty close to the top, for so many reasons.
