I recently received a question from Bruce who really enjoyed a Chicken Caesar Pasta Salad he bought from our Sobeys Deli. Bruce had written us asking for the recipe. Unfortunately for Bruce the recipe was so secret that the store wouldn’t share it with me either. Ever since I had had a craving for Chicken Caesar Pasta Salad, it sounds really tasty and would be perfect for a summer picnic!

Summer in Atlantic Canada means unpredictable weather, so when the temperature rises and the sun in shining, you better be ready to make the most of each day and live a little spontaneously. Last minute trips to the beach, an unplanned overnight at the cottage, afternoons spent by the pool (my fave!) and play dates for the kids at the park are all great options. All this unplanned activity often means that we need to grab lunch and snacks "to go", so I often find myself packing up a cooler for an improvised picnic lunch with what I have available in the pantry and fridge.
