Twice Baked Potatoes are a great side dish, whether it’s made from freshly baked potatoes or leftover ones. This recipe feeds four people using only two potatoes. I like them as a side dish but depending on what you stuff them with they make a nice lunch item or a starter. My number one choice is broccoli and cheese but other choices are bacon and cheese, ham and cheese, scrambled eggs, bacon and cheese (can you see a theme developing here? I like them with cheese, but it is not mandatory).
