While I am not a pastry chef I still need to know how to make a selection of desserts and one that I make often is the classic Apple Tart Tatin. It is a fairly easy dessert that has been around for over one hundred years. You can imagine the countless variations and interpretations that cooks have created over time, I have at least a dozen! Rumor has it that Stephanie Tatin made it by accident but the guests at her Inn liked it so much that it became their signature dessert. Tart Tatin also became a fixture on the menu at Maxim’s of Paris, that was quite a successful mistake.

As a holiday, Thanksgiving has everything going for it! The weather in between all the rain is decent and the brightly coloured leaves still cling to the trees, beautiful. There’s a long weekend full of time spent with family and catching up with friends and of course my favourite part is all the great food.
