This is the time of the year when scary fun and food go hand in hand. I like to play with ideas and food and come up with recipes that are associated with an occasion and Halloween really is a time you can put your scary face. With this recipe we will really scare up some treats that the children will not only love (in a scary kind of way :) to eat, but also have a great time in the kitchen making them. I hope you have as much fun making them as we had. It really was scary :)

Headless Gummi Bear Ice Cream Bars
Makes 8 bars
Prep time: 5 minutes
Total time: 1 hour

1/2 box Compliments Vanilla Ice Cream 2 L
1 bag (200 g) Compliments Gummi Bears
8 wooden coffee stir-sticks, about 4 inches (10cm) long
1 cup (250 mL) chopped chocolate

  1. Line a baking sheet with wax or parchment paper.
  2. Cut ice cream block in 1/2. Then cut each block into 4 bars. You should end up with 8 bars approximately 2 inches (5 cm) square and about 3 inches (7.5 cm) long.
  3. Separate heads from the bodies of the gummies and stuff the body and heads carefully into the surface of each ice cream bar.
  4. Place 1 stir-stick into the end of the bar. Repeat for the remaining ice cream bars. Place on prepared tray and set aside into the freezer to firm up, about 15 minutes.
  5. Meanwhile melt chocolate in a heat-proof bowl over simmering water. When melted remove from heat. Chocolate should just be room temperature but melted.
  6. Remove ice cream bars from the freezer. Drizzle chocolate coating with a spoon over each bar. Chocolate will set almost immediately.
  7. Place into the freezer to set firm, about 1 hour. Serve.

These are great for making a day ahead. Just wrap with plastic wrap and keep in freezer until ready to give out!
