
Fondue is a fun interactive way to entertain and dessert is no exception. We here at the Compliments Culinary Centre take on extern students for a seven week stint, we try to give them experience in all of the projects we work on here at the centre. Melissa just finished her time with us but before she left I asked her for a quick, simple, tasty dessert fondue that was not chocolate recipe (no pressure Melissa!).
Make sure your pot is large enough to hold all of the ingredients and allows for expansion when the cream is added, even though we warmed the cream it will boil when poured into the sugar.
Caramel Marshmallow Fondue
Makes 1 ½ cups
Prep time: 10 mins
Total time: 20 mins
1 cup (250 mL) sugar
3 tbsp (45mL) cold water
¾ cup (200 mL) 35% Cream
1 cup (250 mL) Compliments Miniature Marshmallows
- Heat cream in microwave for 45 seconds, set aside.
- On medium high heat, melt sugar and water in sauce pan until there are no lumps (do not stir), and it is a golden colour (see note in closing). Remove from heat, slowly pour cream into melted sugar and whisk it together incorporating cream into sugar.
- Whisk in marshmallows until they are melted and incorporated into caramel with no lumps.
- Pour in to fondue pot stir occasionally .
* Suggested to dip using : Apples, Pears, Strawberries, Sugar Cookies or Lady Fingers, as well as Graham Crackers.
Please be careful when cooking, caramelizing, the sugar it can burn quickly once it starts to turn that golden colour and it will be around 300°F so no dipping your fingers into the pot. Even if you do not have a fondue pot this is a dessert worth making, you can keep the sauce warm by zapping it in the microwave or putting a bowl over a pot of hot water. Just enough heat to keep the sauce liquid enough to dip the fruit.
