Sometimes even my fridge gets pretty bare, and whipping up dinner for the family can get a little challenging. I thought I had pulled a rabbit out of my hat the other night, creating a delicious dinner from what looked like an empty refrigerator; I was thoroughly pleased with myself. Once the kids had finished their meal, they asked what was for dessert. Dessert, I gasped, I hadn’t thought about dessert. I just finished answering a question from Yana for the Chef's Corner on Sobeys.com. Yana was looking for and easy Danish recipe. I had to answer her truthfully, there is no such thing as an easy Danish recipe. The truth is making Danish pastries takes hours, perhaps even a full day! It involves making a sweet yeast dough, which isn't too complicated. But then there is the business of preparing butter and folding in the butter, which is followed by lots of rolling, folding chilling and repeating, but that is what makes them so tasty!

The egg is widely recognized as a symbol of Easter and giving brightly coloured eggs as gifts to friends and loved ones is a long standing tradition. I can remember dipping eggs into pots full of brightly coloured dyes in school and at home. Making them was only half of the fun!

Good Friday

My mom has many delicious recipes, but this one for her Baked Salmon with a Parmesan Cheese and Herb Crust stands out as one of her favourites. The cheese, herbs and mayonnaise combine in the oven to form this golden brown crisp crust on top, revealing a moist and flavourful fillet of salmon underneath. It was a favourite with my family and I am sure yours will enjoy it, too! Try serving this recipe with some young asparagus and steamed baby potatoes dressed only in butter, sea salt and pepper. Simple, flavourful and very few dishes, what more could you want for a Friday night!? Thanks for the recipe Mom!

Easter Sunday was always a fun time growing up. Even as I reached my late teens I never lost the excitement that the Easter egg hunt would bring. Ok, so even as an adult I do like a good chocolate egg hunt!

The other part of Easter Sunday that would really get me excited, though was the Ham and the GLAZE! The ham was so moist and flavourful and at my house there would be a race to see who would get to the crusty, caramelized, sticky, sweet and tangy glazed pieces of the ham. Definitely one of my Easter eating highlights and memories with my family.
