Winnie, the director of the Compliments Culinary Centre here at George Brown College, took her two girls apple picking the other day and brought in a bunch of apples for us to enjoy. I had forgotten how much fun apple picking was, as a kid my mom would take us all of the time, I remember my brother and I getting into trouble for climbing the trees not using the ladders. My mom’s favourites were the windfall apples (the ones on the ground) they were easy to pick and cheaper then the ones still in the tree!

You may have heard me talking about Panini before and I strongly suggest that you pick up a panini press, if you don’t already have one and its a versatile kitchen appliance that anyone can use. My daughters loved making this particular panini after school.

Apple Brie Panini
Makes 2 meals or 4 appetizers
Prep time: 5 minutes
Total time: 10 minutes

1/2 thinly sliced Royal Gala apple
1 Sensations by Compliments Flatbread, cut in half
½ small wheel of Compliments Double Cream Brie, sliced
1 tsp (5 mL) finely chopped jalapeno pepper

  1. Preheat the panini press. Lay the apples evenly over half of the flatbread, lay the brie over the apples and distribute the jalapeno pepper over the brie. Cover with the other half of the flat bread.
  2. Put into the press and cook until bread is browned and cheese is melted. Remove from the press and let rest for a minute or two before slicing.

So go out and pick some apples while you still can, get a panini press and make some great grilled sandwiches. Hurry, they were calling for frost this past weekend up in my neck of the woods!! Way too early for that. Enjoy.
