One of the most talked about chicken dishes is the “drunken chicken”. This is where you take a chicken and rest it upon a can of beer and roast it in an oven or BBQ. The theory behind this technique is solid: dry heat on the outside to create that classic crisp skin; moist steam from the beer inside, to create a juicy tender chicken. I thought that the more subtle flavour of a Green Tea Beverage would be a nice replacement for a can of beer!

Green Tea Can Chicken
Makes 4
Prep time: 5 minutes
Total time: 1 hr 30 minutes

1 whole (1716 g) Compliments Just Chicken from Ontario Farms Raised without Antibiotics, Vegetable Grain Fed, No Animal Bi Product
1 tsp (5 mL) Salt
½ tsp (2.5 mL) each of the following: pepper, garlic powder, onion powder, cumin, smoked paprika, chili powder
1 can 250 ml green tea beverage

  1. Pre heat oven to 350°F. Mix all dry ingredients. Pour out ¼ of green tea beverage, add 1 tsp of dry mix to the can and place in a roasting pan. Insert the can into the chicken’s large cavity (legs pointing down). Mix the dry mix with the oil and rub all over the chicken.
  2. Place in oven and roast 20 min. per pound or 1 hr. and 20 min. Baste every 20 min. Remove from oven when internal temperature reaches 170F. Let rest for 10 min. before dividing into four portions.

Well, the crisp skin and moist meat made this meal fantastic. The subtle green tea flavour was a bit lost with the stronger seasonings but that did not take away from the quality of this recipe!! Give it a try with your favourite beverage. I hope that you like it.
